Avial - Mixed Vegetable Curry - a Microwave Recipe - Mixed veg cooked in coconutmilk and spices
Ingredients
2 Brinjals
25 g french beans
25 g carrot
15 gm yam
1 raw banana-peeled
1 potato- peeled
1 drumstick
1 tsp cumin seeds
1/2 cup coconut - grated
2 green chillies
2-3 tbsp fresh curd
1 tsp salt
1 tbsp coconut oil
1 cup water
few curry leaves
1/2 tsp mustard seeds
1/2 tsp cumin seeds
Directions
1.Cut the vegetables into bite size pieces and wash them well.Grind 1 tsp cumin seeds,1/2 cup grated coconut and 2 green chillies into a coarse paste.
2.Take a microwave bowl,add 1/2 tsp mustard seeds,1/2 tsp cumin seeds,curry leaves and 2 tsp coconut oil.Microwave this for 2 mins on high.
3.Take the bowl out,add the vegetable pieces, salt,ground coconut masala and 1 cup water and microwave this on high for 15 mins.
4.Take the bowl out and add 2-3 tbsp fresh curd and mix well.
5.Sprinkle 1 tsp coconut oil on top.Close the lid for 10 mins and then mix well.
6.Serve this hot with Aappams or rice and rasam or an accompaniment for Adai.
