This Healthy Moong Stirfry recipe is served as the Healthy Recipe of the Day. Usually done and served as an Evening Snack item can be done a Stirfry .This needs about 10-12 mins cooking time and serves 4 nos. Serve it hot as a teatime snack or taste-match. Healthy Moong Stirfry
Ingredients:
100 gms - sprouted Green Moongdal - soaked in water for 30 mins atleast
1 big onion - sliced thin or chopped fine
1/2 tsp mustard seeds
a pinch of turmeric powder
3 tbsp grated coconut
a few curry and coriander leaves
1 tsp fresh lemon juice
2 green chillies - slit
2 tsp coconut oil
1/4 tsp salt
50 ml water
Directions:
1.In a microwave-safe bowl, add coconut oil,mustard seeds,chopped onions,green chilli and curry leaves and microwave on high for 2 mins.
2.Add sprouted Moongdal,turmeric powder, salt and 50 ml water. Microwave it on high for 5-6 mins.
3.Add grated coconut and mix well.Microwave it on high for 2-3 mins more.
4.Add lemon juice and mix well. Garnish with chopped coriander leaves and serve it hot as a snack or taste-match.
