Digestive biscuits can be best described as a fibre-rich and highly nutritious semi-sweet or short meal and can easily made at home.This mildly flavored Biscuits can be served with hot Cardamom Tea or anytime and highlighted as healthier than other biscuits.U can try it coated with chocolate or including choco flakes or choco chips,caramel,orange-flavored etc. Not an Authentic recipe but its my version of tested and tasted healthy Digestive Biscuit. Homemade Digestive Biscuits lyered with Sweet Potato Cream - Savour the Taste
Ingredients:
1 cup brown wheat flour
1/4 cup Soya Flour
1/6 bran rice flour or oatsmeal
1/4 tsp maze powder
2 tbsp crushed cashews
a pinch of salt
2 tbsp butter or refined oil
3 tbsp boiled lowfat milk
1/3 or 1ittle more than that powdered sugar
1/4 tsp sodium bi carbonate
For the Sweet Potato Custard cream:
1 small sweet potato - boiled and mashed
50 ml milk - boiled
50 gms sugar
2 tsp custard powder(optional)
1/2 tsp orange essence
Directions:
1.Combine all the ingredients after sifting the flours with baking powder into a smooth dough adding the
cashewsnuts,butter or refined oil,3 tbsp boiled lowfat milk and needed water.
2.Fill a thin layer in a round biscuit cutter and do round shaped biscuits.
3.Bake in a pre-heated Oven of 170 degree C for 12 to 14 mins or till done and little crispy.
4.For the Cream,boil the milk again adding the dissolved custard powder and sugar.Then mix with essence and mashed sweet potato and stir it.when it begins to thicken, turn off the flame.
5.Pipe the cream over a digestive biscuit and place one digestive biscuit over it and similarly arrange all and serve it anytime.
