Cornflour Lemon cake - Lemon flavored sponge cake done with cornflour
Ingredients:
1 tsp grated rind of lemon
4 tsp lemon juice
1/2 cup refined flour
1/2 cup corn flour(little less than)
1 tsp baking powder
1/2 cup powdered sugar
50 gms butter or 50 ml refined oil
4 tbsp yoghurt
2 eggs - well beaten
2 tsp butter - to grease the tin
For the Toppings:
100gms sugar
70 ml water
1 tbsp or 4 tsp lemon juice
Directions:
1.Preheat the oven to 180 C.
2.Sift refined flour,cornflour and baking powder to a bowl.Add lemon rinds and lemon juice and mix it into crumble.
3.whisk butter and powdered sugar till creamy or fluffy.Stir in yoghurt and mix well.
4.Add it to the flour mix with beaten eggs and fold it well.add 50 - 70 ml lukewarm water if needed.
5.Grease the cake tin with butter and pour in the cake flour.Bake at 180 C for 15-18 mins or till done.(when a fork inserted comes out clean at the centr of the cake).Leave it for 15 mins.
6.Caramelise 100gm sugar in 70 ml water and add 1 tbsp lemon juice and stir in till the sugar gets dissolved.
7.Pour the caramelized topping over the cake and serve it warm.
