This Brinjal Masala is easy to make and an ideal sidedish for Rasam Rice and Curd Rice.It requires less spices and time and tastes so good even if it is simple-made.U can do this recipe with French beans,Broad Beans,Boiled Yam pieces, Mushroom, Capsicum and etc...This tastes divinely good and U can have it with Steamed Rice without Curd or Rasam or Sambar. Brinjal Masala - Brinjal pieces cooked with selective spices
Ingredients:
4 medium-sized Brinjals (Clean and cut into bite-sized pieces)
1 onion - finely chopped
1/2 tsp chilli powder
1/4 tsp cumin powder
1/4 tsp turmeric powder
1/2 tsp mustard seeds
1 tbsp coconut paste with 1 sambar onion and 1/2 tsp cumin seeds
1/2 tsp or salt to taste
few curry leaves
few coriander leaves
130 ml water
2 tsp refined oil
Directions:
1.Heat oil in a Kadai, Splutter mustard seeds,chopped onions,cumins and curry leaves.Saute it for 3 mins on medium flame.
2.Add the Brinjal pieces,spices,salt and saute it for 2 mins till the spices get mixed well.
3.Add 130 ml water, Cover and cook till it gets done in 7 mins time on medium flame - stirring it often.
4.Add coconut paste and stir-cook it or 3 mins.
5.Gather this masala in a bowl and serve it hot with rice or rasam or yoghurt or Curd rice or Coconut rice or chapati or Idli.
