Badham Mutton Biryani

A simple and rich Mughlai Biryani preparation is given here for those who want Biryani differently.U can also try this recipe with 1 tomato-chopped fine and 2 tbsp cashew paste and with few crushed cashewnuts.Try this at home and enjoy your Meal!.BonAppetit!.

Badham Mutton Biryani - Mutton Biryani-  little differently
 Ingredients:
    2 cups basmati rice-washed and sauteed in 2 tsp ghee
    1 kg mutton pieces-cleaned
    1 cup thick coconut milk
    2 cups second coconut milk.
    1 tbsp ghee
    2 cups golden-fried onions
    1 tsp mint-coriander leaves paste
    1 tbsp ginger-garlic paste
    1 tbsp ground-spices( 1 cinnamon stick,2 cloves,2 green cardamoms,1/2 tsp saunf, 10 pepper corns)
    1 tsp nutmug powder
    7 green chillies-slit
    1 cup fresh curd
    a pinch of saffron soaked in 2 tbsp rose water
    2 tbsp almond paste and 5 crushed almonds(peeled)
    1/4 tsp black-cumin seeds(crushed)
    2 tsp sugar
    juice of half-lemon
    1 tbsp refined oil
    few coriander and mint leaves

Directions:
    1.Wash the mutton pieces with little salt atleast 5 times.keep it aside.
    2.Heat refined oil in a kadai and add saffron,sugar and fried onions and saute for 3 mins.
    3.Take a pressure pan,add mutton pieces,ginger-garlic paste,saffon-fried onions step 2 mixture, ground spices,mint-coriander paste, almond paste, curd,green chillies,salt,lemon juice and ghee.
    4.Now add 1/4 cup (ginger-garlic paste) ground masala washed water,1/4 cup almond paste washed water and  1/4 cup mint-coriander paste washed water.
    5.Pressure cook upto 5 whistles or 10-12 mins and keep it aside for 10 mins.
    6.Prepare the coconut milk(1 + 2 cups).Wash and ghee-saute 2 cups basmati rice.
    7.Open the pressure cooker and add ghee-sauted basmati rice and 3 cups fresh coconut milk.Sprinkle 1 tsp salt,crushed black cumin seeds and nutmug powder.Mix well for a min.
    8.Pressure cook this upto 1 whistle and turn off the flame.
    9.Serve this Mutton Biryani hot with raita of ur choice or kebab or boiled Egg or Chips or Korma or stew.

  3. Biryani looks fabulous ... I love this blend of royal spices, just enough to lift anyone's spirit.
    There is a doubt though.. in the second step saffron and fried onions are added but they are included in the 3rd step again... do we need to add them half and half in two steps?

  9. @ Reva - Sorry for being late Dear.Its not repeated or mistakenly typed.The same Step 2 sauteed-mixture is mentioned there to be added with mutton pieces and other ground spices for the next process (in step 3).Hope this helps.
