This stirfry is not only easy-to do(Need to spare 6-7 mins for it) but also can be used as Salad,sandwich filling,as a filling in Chapati rolls.This Veg-Combo Stirfry is almost 15 years old - I tried it as my first-step in l(e)azy cooking - I first published it 2 years back in KK.com.This Stir-fry can be tried with Potato(chopped fine),any Greens, Capsicum,Mushroom, Babycorn and Chopped fine Carrots.U can add 1/4 tsp Subji Mazala Powder in Step 3 if u want it spicier.Very tasty side dish for meals -anytime.Can be taken with Steamed Rice,variety rices,sambar, Rasam and Curd Rice,chapati rolls etc.Bon Appetit
Ladiesfinger-Egg Stirfry - Chopped Okra scrambled with Egg and spices
Ingredients:
12 Bhindi or LadiesFingers - cut into small pieces
3 Eggs (well beaten with a pinch of salt)
1 tsp freshly ground pepper powder
1/4 tsp chilli powder
a pinch of turmeric powder
1/2 tsp salt - to taste
1 tbsp grated coconut
a sprig chopped curry leaves
few chopped coriander leaves
1/2 tsp mustard seeds
1/2 tsp cumin seeds
2 tbsp chopped onion
1/2 tsp lemon juice(optional)
2 tsp + 1 tsp refined oil
Directions:
1.Heat oil in a pan,add the chopped Ladies-fingers and saute for 2-3 mins before turning colour.
2.Take that out and add 1 tsp oil,mustard seeds,then cumin seeds,chopped onions,chopped curry leaves,coriander leaves and saute well.
3.Add the half-done ladies-figers and saute adding freshly ground pepper powder,turmeric powder,chilli powder and salt to taste and saute well.
4.Now add well beaten eggs and saute well.
5.Then,add the grated coconut and lemon juice and mix well.Turn off the flame.
6.Serve it hot with rice and sambar.
