Caramelized Potato Wedges

Potato wedges or jojos - are a variation of french fries(larger than the French fries and often unpeeled) and  are either baked or fried.They are seasoned with salt, pepper and spices prior to cooking and deep-fried to crisp.Potato wedges are popular snacks and served with condiments such as sour cream,sweet chilli sauce, brown sauce,ketchup or barbecue sauce,mayonnaise.It can be tried little differently otherwise- a Sweeter variation of it  and served crispy as Teatime Snack.A lot easier to do and U need to spare 2-3 more mins in the kitchen.(Cooking Time: 7- 8 mins).Enjoy ur teatime.It can be made a Toffee if U fry the potato as fritters with refined flour coating and then dipped in a darkened caramelized sugar syrup and made to dry.

Caramelized Potato Wedges - Potato wedges Caramelized in Sugar Syrup


Ingredients:
1 big potato - peeled and wedged
a pinch of salt
250 ml refined oil
200 gms sugar
a few drops vanilla or cardamom essence


1.Heat oil in frying pan.Mix a pinch of salt with the potato wedges and deep-fry them as u do for french fries.
Allow it to cool.
2.Dry-saute the sugar in a thick bottomed frying pan or kadai.When sugar begin to melt add cardamom or vanilla essence,turn into low flame for 20 odd secs more and Turn off the flame immediately before the caramelized sugar turns colour.
3.Add the potato wedges and stir it atonce so that the sugar syrup coats evenly on the wedges.Serve it  (with Tea or Coffee) anytime.

Note:
U can do 300 ml sugar syrup (with 250 gms sugar) upto 1 string consistency and dip the wedges,take them out to dry the sugar coating otherwise.
