Coriander Corn Veg Soup & Reposts

This aromatic and tasteful Green Soup is Yumm to have and easy to make. U need 12 - 15 mins cooking time and this serves 4 nos. This healthy and anytime-have soup is flavorfully delicious and given here as recipe in easy-to follow steps. Enjoy easy cooking at home. Enjoy Ur Meal!. Have a great Weekend!. BonAppetit!.

Coriander Corn Veg Soup
Ingredients:
1 handful coriander leaves
1-2 tbsp pulsed Veg + fresh American sweetcorns
1 tsp grated ginger
1 - 2 garlic cloves - chopped fine
6-7 black pepper corns
1/2 tsp cumin seeds
600 ml Veg stock
1 bay leaf
1 clove
1 tsp cornflour
1/2 tsp salt
1 tsp olive oil
Directions:
1.Separate coriander stem from the leaves.Keep aside 3/4th of the coriander leaves and pulse it fine.
2.Crush pepper corns and cumin seeds.Dissolve cornflour in 1 tbsp warm water and keep it aside.
3.Heat oil in a non-stick sauce pan. Add bay leaf,clove,grated ginger and chopped garlic.Saute it for a min.
4.Add veg stock and coriander stem and bring it to boil.
5.Add crushed the 1/4th chopped coriander leaves,pepper corns and cumin. Bring it to boil.
6.Add the pulsed coriander and pulsed veg + corns and cook for 6 - 7 mins on medium - low flame.
7.Strain the soup adding Sweet corns,salt and the corn flour dissolved water and bring it to boil.
8.Garnish with corns and coriander leaves on top and serve it hot.

Shahi Paneer

This deliciously thick and creamy-done Paneer Gravy is easy to make and tastes divine. U can do it in 13 - 15 mins time and this serves 4 nos. U can use 50 ml tomato puree for a tomato. This dish reminds me of my Mom as she does it better than me. Try this Shahi Paneer at home and Enjoy an easy Dinner with Rice, Bread Slices and Indian Breads. BonAppetit!.

Shahi Paneer
Ingredients:
100 gms Paneer - cubed
1 Medium sized Onion
1 medium sized tomato
1 tsp ginger garic paste
1 - 2 small green chillies
1/2 tsp kashmiri red chilli Powder
a pinch of cumin powder
a pinch of turmeric Powder
1/2 tsp Garam Masala Powder
1 - 2 tsp lowfat Cream
2 tsp  Dry fruits (Cashew Nuts,Raisins) - optional
2 tsp coconut milk powder dissolved in 50ml warm water or 50 ml milk
1 tsp finely chopped coriander leaves
2 tsp oil
1/2 tsp Salt to taste
 Directions:
1.Grind onion, tomato and green chillies using mixer grinder and make a fine paste.
2.Heat oil in a non-stick kadai.Fry paneer cubes on medium flame till light brown. Keep it aside.(Saute the dry fruits in the same oil and keep it aside - optional).
3.Saute  Onion-tomato paste(step 1) and ginger-garlic paste in the remaining oil till oil starts separating.
4.Add salt, red chilli powder,cumin powder, turmeric powder and garam masala. Saute for 2 mins.
5.Add dissolved coconut milk (or milk) to the gravy and bring it to boil on medium-low flame. cook till the gravy  thickens.
6.Add fried paneer cubes, half of the dry fruits and 1 tbsp cream. Cook for 5 minutes.
7.Garnish this Shahi paneer with cream,the remaining dry fruits and chopped coriander leaves.
