Tender Coconut Pulao

Tender Coconut is considered good for health. U can do many recipes with Tender Coconut Water and its flesh. So far it is used more in doing Desserts like Kheer,Payasam, Pudding, Icecream,Cake..and also in Salad, Soup, Rasam, raita and in Curried Dishes like Stew,Avial,Korma etc..In rice dishes it can be done as Biryani,Variety Rice and Pulao.. This recipe states a Pulao preparation that is done using Tender Coconut Water and coconut. U can have it with raita or Potato or Chicken Fry. Its Yumm and easy to make.U need 2 tender coconuts for this measurement.Try this Simple Tender Coconut Pulao which needs 15 mins Cooking time and serves 3 - 4 nos.Enjoy Easy n Healthy Cooking at home!. Tender Coconut Pulao
Ingredients:
1 3/4 cup Basmati rice - cleaned and ghee-roasted with 2 tsp ghee for 2 mins
2 onions - sliced fine
finely sliced tender coconut flesh of 2 tender coconut
3  - 3 1/4  cups tender coconut water
1/2 tsp jeera
1 garlic pod - crushed
a pinch of grated ginger
2 bay leaves - crushed
2 cardamoms
2 cloves
1 cm cinnamon stick
few coriander leaves - optional
1/5 tsp salt
2 tsp refined oil + 1 tsp ghee
Directions:
1.Pressure cook the ghee roasted basmati rice using tender coconut water and a pinch of salt.Keep it aside for the pressure to be released.
2.Finely slice the tender coconut flesh.
3.Heat oil and ghee in a Kadai. Fry bay leaves,cardamoms,cloves,cinnamon sticks,crushed garlic pods, grated ginger,then sliced onions and jeera for 2 -3 mins .
4.Add the sliced tender coconut pieces and stir-fry or a min on low flame.
5.Add the basmati rice that is done with tender coconut water and mix it well for 2 mins.
6.Thats all!.Finish it with chopped coriander leaves or ghee-roasted cashews. Turn off the flame.
7.Serve it hot with raita,potato fry or chicken fry or stew or korma.Yummy!.
