Sheer Khurma

This Sheer Kurma or Khurma is a well known Mughlai Milky Dessert done with Vermicelli or Semiya. 'Sheer Khurma' in Urdu means 'Sweetened Milk with dried Dates'. An authentic recipe is given here and it takes abt 15 - 18 mins to serve 10 nos and mostly done without adding dried dates. Very aromatically yumm and thick Milky Dessert is a must-serve in celebrating Festive Occasion like Eid in many Muslim Households by the Urdu Speaking Community. Its more or less the same North Indian Vermicelli Kheer and South Indian Vermicelli(Semiya) Paysam. Sheer Kurma (Rich Mughlai Vermicelli Dessert)
Ingredients:
600 ml boiled full cream Milk
100 gms vermicelli - crushed
70 - 100 gms sugar - as per taste
1 tbsp almond flakes
2-3 blanched pistachios
2-3 saffron strands
2 tsp ghee
1/4 tsp green cardamom powder
a pinch of nutmeg powder(optional)
1 tsp sunflower or chironji seeds - optional
5 tbsp sweet condensed milk - while serving
Directions:
1.Soak saffron in 1 tbsp warm milk.
2.Heat 2 tsp ghee in a kadai and saute crushed vermicelli for 2-3 mins till it turns light golden brown on medium flame. Add 150 ml water and cook it till the vermicelli gets half done for 3 -4 mins.
3.Add milk and bring it to boil till the vermicelli gets done well and the milk turns light pink in colour on
medium - low flame for 5 - 6 mins time.
4.Add sugar and stir it well for a min or 2 - till it dissolves fully.
5.Add cardamom powder, nutmeg powder(optional),soaked saffron with milk,sunflower seeds(optional),almond and pistachio flakes and let it simmer for 6 more mins on low flame - keeping it covered and stirring it well every min.
6.Serve it hot or chilled to the Guests in 10 Dessert bowls with 2 tsp sweet condensed milk on top and dried
dates in a saucer.
Tips:
1.U can add 5-6 dried Dates - soaked in milk and pulsed in step 3 - while adding milk.
2.U can add 1 tbsp dry-roasted grated coconut in Step 5.
