Spinach Masala (Microwave)

Yesterday, I got this '50 Great Curries of India' from Mrs Revathi of Kaarasaram as my entry for the Rice Event was picked up for the Giveaway and very much delighted to go thru the book. Thank U so much Reva and I will keep it treasured long. Thanks again Dear Reva!. Now to the Recipe!.

This dish is a quickie. It can be done in 7-8 mins. Those who need a quick gravy can try this. It turned out so Good and needs very few ingredients. U can try the same with potato,brinjal,mushroom,capsicum etc... Enjoy Easy Cooking at home!. Enjoy Ur Meal!. BonAppetit!.

Palak Masala (Microwave)
Ingredients:
1 1/2 cup finely Chopped Palak or South-Indian Spinach or Pasalai Keerai
1 tbsp tomato puree or Ketchup
1 tsp any good subzi or Mutton or Chicken  Masala
50 ml  dissolved Coconut milk of 1 tbsp coconutmilk powder or Boiled Milk
1/2 fresh garlic-ginger paste
1/2 tsp coriander leaves - finely chopped
1/2 tsp salt
2 tsp oil
Directions:
1.Mix oil,chopped spinach, ginger garlic paste, Subzi or Chicken masala,100 ml water and salt in a microwave-safe bowl.
2.Microwave it on High for 2 mins.
3.Add tomato puree or ketchup and Microwave it on high for a min.Take it out and mix it well.
4.Add coconutmilk or milk + 100 ml water, Mix it well and Microwave it on high for 3 mins.
5.Take it out,Sprinkle coriander leaves,mix it well and Microwave it on high or a min or 2.
6.Serve it hot with rice or Indian Breads.

Note:
U can add 1 cup an hour-soaked Chickpeas Sprouts in step 4 and do step 4-5 and again 2 mins extra  microwave cooking on high for 2 mins and proceed to step 6.
