Olive Chutney

This Chutney is healthy,nicely olive-flavored and super yumm. If U have extra Canned olives at home or left-over Olives untouched, then  try  this chutney before it go wasted. This very simple and easy to do chutney needs 5 mins time in the kitchen and serves 4 nos.U can use it as a spread(centre) for Masala Dosa or Vada Pav instead of  red chilli chutney or Peanut chutney spread respectively - if done without grated coconut but adding 1 sambar onion instead. This can best-accompany all Indian Breads and variety rices.Try it at home when U need a healthy variation. Enjoy Easy recipes at home. Enjoy Ur Meal!. BonAppetit!.

Olive Chutney
Ingredients:
100 gms Green Olives - canned n pitted
1 small green chilli
1/2 tsp grated ginger or 2 small garlic cloves
3 tbsp grated coconut
a pinch of salt - optional since salt has already been added to the olives
For the seasoning
1/2 tsp mustard seeds
1 tbsp finely chopped onions
2 small red chillies
1 sprig curry leaves
1 tsp oil
Directions:
1.Clean or wash Olives and grind it with ginger or garlic, green chilli,grated coconut and salt if needed.
2. Heat 1 tsp oil in a kadai and fry the seasoning ingredients starting from the mustard seeds and in the same order till curry leaves.When it get roasted,add it to the ground Olive Chutney and serve it with Indian Breads or variety rice.
Healthy n Yummy Chutney indeed!.

@ Rajeswari - U can get canned Olives(pitted) in all Super or HyperMarts or Dept. Stores. like Santosh in AnnaNagar.
