Veg Moglai(Mughlai) Gravy

A rich, creamy and yummy Veg preparation is given here to try at home on special occasions. A typical Mughlai (Nawabi) recipe which ur family can enjoy for Dinner with Bread Slices or Indian Breads.I tasted this recipe (with boiled Eggs)  for the first time in a Tamil Muslim Restaurant in Dubai 8 years ago.This Vegetarian version of  recipe is mine.This can be done in 18 mins cooking time and this serves 4 nos.U can do this dish with whole Eggs/Egg halves or scrambled Eggs and with/without Kasur methi or cream. Veg. Moglai Gravy - a Tasty Home Vegetable preparation of  Mughlai or Moglai Curry
 Ingredients:
    2 cups of chopped Vegetables - 1/2 Carrot,4 French Beans,7 cauliflower florets,1/4 capsicum and 2 tbsp fresh green peas
    1/2 tsp red chilli powder
    a pinch of turmeric powder
    a pinch of coriander powder
    a pinch of nutmeg powder
    a pinch of maze powder
    1 tbsp chopped coriander leaves
    1 tbsp yoghurt
     2 tsp low fat Cream
    1/3 tsp kasoor methi
    1/2 tsp garam masala
    lilltle more than 1/2 tsp salt - to taste
    100 - 150 ml water
    1 tbsp cooking oil(or butter)
  Ground Pastes:
     ground onion masala - paste of 1 big onion with 1cm size ginger + 1 big clove of garlic + 1 tbsp yoghurt +1/2 tsp garam masala
     ground tomato masala paste of  1 tomato (medium-sized) + 6-7 cashewnuts + 2 tsp poppy seeds(soaked for 30 mins)

Directions
    1.Boil the Vegs for abt 7 mins till it gets done 3/4th and Keep it aside
    2.Heat the oil in a pan and fry the  ground onion masala and fry till oil starts to leave the mixture.i.e upto 4-5 mins on good flame.
    3.Add the red chilli powder, turmeric powder,coriander powder,nutmeg powder and maze powder and saute it for 2 mins.
    4.Add the tomato paste with 100 ml water, then add well beaten Yoghurt, salt to taste and the chopped coriander leaves.
    5.Sprinkle garam masala and saute it  for a min.
    6.Add the 3/4 th done Vegetables and mix it well till it gets covered well in the masala.
    7.Cook for about 2-3 minutes and then add kasur methi and stir-cook for a min or 2 till done.Add 2 tsp fresh low fat cream(optional) and mix it well for 15 secs on low flame and turn off the flame.
    8.Serve it hot with Steamed  rice or Bread Slices or Indian Breads.
