This recipe is given here for those who have been hunting for it so long.These Caramelized Gooseberries were once served as a traditional sweet in Tamil Villages.It can be done with both the Gooseberry varieties.Try this recipe at home and enjoy.U can serve it either with Sugar syrup or without it.BonAppetit!
Caramelized Gooseberry - Gooseberries done in sugar syrup
Ingredients
15 Gooseberries-clean well
300gm or 350gm Sugar
1 litre water
1 tsp vanilla essence(Flavoring agent)
a pinch of salt
Directions
1.Take a microwave-safe bowl,heat water on microwave(high) for 5 mins (till water begins to boil).
2.Put the gooseberries in that bowl and microwave(high) for 10 mins.
3.Take that bowl out and remove gooseberries,one by one and add sugar and a pinch of salt(very little)to the bowl and mix well till sugar gets dissolved completely.M/W this for 2-3 mins on high.
4.Take the bowl out and add the gooseberries.M/W this on high for 6-7 more mins.
5.Take the bowl-out and add the flavoring agent and mix well.Microwave this high for 3 more mins atleast.
6.Take the bowl out after 5 mins(the Gooseberries should be very tender and well-cooked in sugar syrup) and let it cool for an hour.
7.Serve these Caramelized Gooseberries with or without sugar syrup in a dessert bowl.
Recipe W/O Microwave OVEN:
Pressure-Cook the cleaned Gooseberries in 700 ml water upto 1 whistle.Leave it for the pressure to be released.Caramelize 300 ml water with 350 gms sugar till it gets into 1 string consistency.Add the gooseberries along with the pressure- cooked water, a pinch of salt and stir-cook till it gets into 2/3rd amount.Add the flavoring agent and stir-cook for 3 - 5 more mins on medium flame.The Gooseberries should be very tender and well-cooked in sugar syrup but don't over-cook after adding the flavoring agent and let it cool for an hour.Serve the Caramelized Gooseberries with or without sugar syrup in a bowl.

I love gooseberries cooked in sugar syrup! I 've never cooked them at home but buy these sweets at every opportunity. I think i have a couple sitting in my fridge right now. I am going to eat one right away :)
And i 've seen gooseberries at the farmers market, wonder why i never bought them till date. I surely will next time and make this according to your recipe. Can you tell how excited i am from the length of this comment? :)
