Anchovy Fish Kuzhambu using Microwave Oven - Anchovy fishes cooked in spices
Ingredients
15 no Anchovy fish- Wash and clean well with little salt.
1 onion, chopped
1 tomato,chopped
2 green chillies-slit lengthwise
7 garlic cloves-peeled
1 tsp fenugreek seeds
1/2 tsp mustard seeds
½ tsp cumin seeds
1 tsp chilli powder
1 tsp corainder Powder
¼ tsp turmeric powder
1/2 cup tamarind extract of gooseberry size tamarind
2 tbsp fresh coconut paste with little cumin seeds,5 pepper corns
400ml water
1 tsp salt to taste
1 sprig curry leaves
1 tbsp chopped coriander leaves
2 tsp refined oil + 1 tsp coconutoil
Directions
1.Take a microwave-safe bowl,add fenugreek seeds,mustard seeds,cumin seeds,chopped onions,garlic cloves,curry leaves and refined oil.Mix them well.Microwave high for 2 mins.
2.Mix chopped tomato pieces,tamarind extract,1 cup water,half coriander leaves,chilli powder,coriander powder and turmeric powder.
3.Add this to the step 1. bowl's mixture and mix well.Microwave this on high for 20 mins atleast.
4.Take the bowl out and add coconut paste,2 green chillies,salt,cleaned Anchovy fishes,the remaining water and the other-half coriander leaves.Mix them well.
5.Microwave this on high for 12 mins atleast or 13 mins.(for other fishes upto 15 mins).
6.Garnish with coriander leaves and add a dash of coconutoil on top and serve this tasty Anchovy fish Kuzhambu hot with steamed rice, wheat dosa, chapati, idli etc.
