Corn Veg Salad

This is a simple and handy Salad and can serve a meal anytime.This colourful and half-done crunchy Vegetables can also accompany Curd rice even if it is not spicy.This serves 3.U can mix it with cucumber slices,lemon juice and 1/2 tsp white pepper powder and serve it.

Corn Veg Salad - Corn mixed with selected Vegetables and served as salad

Ingredients

    100 gms fresh American SweetCorn kernels
    1 carrot -cut into 1 cm cubes
    8 french beans - cut into 1 cm size
    1 potato - scraped and cut into 1 cm cubes
    a pinch of salt or needed
    1 tbsp coconut oil
 
Directions:
    1.Heat 2 tbsp water with a pinch of salt.Add the sweet corn kernels and 1/2 tsp coconut oil,boil for a min or 2 till water runs dry.Keep this aside.
    2.Heat 1 tsp coconut oil and stir -fry the Carrot pieces with a pinch of salt and 2 tsp water added for a min.Take that out and keep it aside - when half-done.
    3.Add 1/2 tsp oil,stir-fry the french beans adding 2 tsp water with a pinch of salt for a min.Take this out and keep it aside.
    4.Add 1 tsp oil and stir fry potato pieces with 1 tbsp water added with a pinch of salt for a min or 2.Take this out when half-done.
    5.Take a serving bowl add these four Vegs,mix this well.Check for salt.
    6.Serve this immediately.

Even I make corn salad, here is my recipe: Mix corn and finely chopped capsicum (red, green, yellow) and microwave it for 3-4 minutes. Add grated coconut (remove the brown layer of the coconut before grating). Add finally lemon juice, salt and black pepper. Try it, its tastes good. You can eat it hot or cold depending upon your taste.

Hi Saru!,Thanks a lot for sharing a nice recipe of Corn-Capsicum Salad.Sure it will good.Adding 1/2 tsp coconut oil before M/W ing will add a fine flavor to the dish.
