Mixed Veg. Bread - A Microwave Recipe

This easy and Yumm  recipe can serve a Teatime Snack for your family.Its very healthy and tasty and U can add half- cup of chopped greens to make it even healthier.(U can have it for breakfast or Dinner or anytime).This preparation is something  between Bread Upuma and Chat.U need to spend 10 mins of ur time only in the Kitchen.Enjoy this Mixed Vegtable Bread with ur choice of ketch-up anytime.

Mixed Veg. Bread - A Microwave Recipe -  Half-done Veg stir-fried with Bread pieces

Ingredients:
8 bread slices -  edges removed
1 big potato - peeled and chopped
1/2 carrot - chopped
1/4 Capsicum - chopped
1 green chilli - chopped
4 french beans - chopped
1 tsp lemon juice
1/2 onion  chopped fine
1 cherry tomato - chopped fine
2 tbsp - peeled peanuts
2 tsp coconut oil
1 tsp ghee
less than 1/4 tsp salt
a pinch of turmeric powder.
chopped coriander leaves - 1 tbsp

Directions:

1.Take a microwavable bowl,add all the vegetables,both the oils  + ghee,salt and turmeric powder including
peeled peanuts.Mix this well.Sprinkle 1 tbsp water over it and Microwave this on medium-high for 5 mins.
2.Meanwhile chop the bread slices after removing the edges.Add this to the half-done Veg mix and microwave this on medium High for 3 more mins.
3.Sprinkle lemon juice on top and garnish with coriander leaves.
4.Serve this hot with ketch-up.

I like the dishes which are low on calories and fat and can be cook and serve in less time that make dishes like these best option for people like me who are little bit more conscious about healthy food.
