Mixed Veg. Bread - A Microwave Recipe - Half-done Veg stir-fried with Bread pieces
8 bread slices - edges removed
1 big potato - peeled and chopped1/2 carrot - chopped
1/4 Capsicum - chopped
1 green chilli - chopped
4 french beans - chopped
1 tsp lemon juice
1/2 onion chopped fine
1 cherry tomato - chopped fine
2 tbsp - peeled peanuts
2 tsp coconut oil
1 tsp ghee
less than 1/4 tsp salt
a pinch of turmeric powder.
chopped coriander leaves - 1 tbsp
1.Take a microwavable bowl,add all the vegetables,both the oils + ghee,salt and turmeric powder including
peeled peanuts.Mix this well.Sprinkle 1 tbsp water over it and Microwave this on medium-high for 5 mins.
2.Meanwhile chop the bread slices after removing the edges.Add this to the half-done Veg mix and microwave this on medium High for 3 more mins.
3.Sprinkle lemon juice on top and garnish with coriander leaves.
4.Serve this hot with ketch-up.
