Chicken in Spicy Sauce - Chicken pieces cooked in spicy sauce
Ingredients
300 gm chicken-cut into thin boneless slices
4 garlic cloves + 2 chopped garlic cloves
1 inch grated ginger
1 tbsp curry paste (of red chillies -5 no.s with 1 tsp vinegar,2 tbsp roasted peanuts(peeled) and 1/2 tsp salt,4 garlic cloves,ginger and 5 pepper corns)
1/2 tsp Aachi Chicken Masala or any curry masala powder
1 tbsp tomato garlic sauce
2 tsp refined oil
1 tbsp chopped spring onion
few thin Capsicum slices
1 1/2 tsp crushed jaggery or sugar
100ml thick fresh coconut milk or dissolved coconutmilk powder
1/2 tsp salt
few coriander leaves
Directions
1.Mix ginger-garlic Chilli-Curry paste and rub over the chicken.Set aside for 20 mins.
2.Heat oil in a pan. Add spring onion and saute for a few seconds.Remove and keep aside.
3.Saute the marinated chicken pieces for 2-3 mins and add the below ingredients before it changes colour.
4.Add the the capsicum slices,tomato garlic sauce,washed masala (curry-paste) water,crushed jaggery or sugar,chicken masala or curry masala powder,salt,coriander leaves and coconut milk.

You can get this fish sauce in some supermarkets.U can prepare this sauce at home also.
Fish Sauce Preparation:
2 cups finely cut or minced fish pieces,5 cups water,1 tsp garlic paste,2 tbsp whole black peppercorns,1/2
cup soy sauce,2 tsp lemon juice,2 tbsp vinegar,1 tbsp sugar,1 tsp ginger paste,1/4- tsp chili powder,2 tspsalt. In a large bowl, add 2 cups fish pieces + 5 cups water.Bring to a boil, then reduce heat and simmer for 15 minutes. Add garlic paste + peppercorns + soy sauce + lime juice + vinegar + sugar + ginger paste + chili powder+ salt.Bring to a boil, turn heat down to medium,add 2 cups water and cook for 15 minutes.You can adjust the salt.Allow to cool.Strain into a container.

5.Add the sauteed spring onions and stir well.Cover the pan and cook upto 3 whistle.Turn off the flame. 6.After 10 mins,See if the sauce is too thick,then add little fish sauce(50-100ml) or chicken stock(u can prepare it at home with the remaining chicken pieces with bones) or the second coconutmilk (if u prepared it fresh) and stir-cook till it begins to boil and turn off the flame after a min.
7.Serve this hot with steamed rice.Note:
