This is one of the variety rices that are served in South India, TamilNadu and can be done easily in 20 mins cooking time. Tomato Rice - a Variety Rice made with tomato( puree) and other spices
Ingredients :
2 big juicy tomatoes- Pureed (put the tomatoes in boiled water for a min and peel off the skin and pulse this for 5 secs (2 times) in a mixer-grinder)
1 3/4 cups basmati rice or 1 1/2 cups raw rice
1 onion - sliced fine
1/4 tsp cumin seeds or saunf
1 tsp ginger-garlic paste
1/2 tsp chilli powder
1/4 tsp coriander powder(don't add more)
1/2 tsp ground masala of (1/4 tsp jeera,1 cm cinnamon stick,1 clove,1 cardamom,1/4 tsp saunf,1/2 cm jadhipattri) or garam masala
1/2 tsp Salt - to taste
1/4 tsp turmeric powder
1/2 tsp mustard seeds
3 green chillies-slit
few curry leaves
few coriander leaves
few fresh greenpeas(optional)
few ghee-roasted cashewnuts
2 1/2 cups water or (3 cups for raw rice)
2 tsp refined oil with 1/2 tsp ghee
Directions :
1.Wash the basmati rice well and pressure-cook with 2 1/2 cups water upto 1 whistle. Leave this aside.
2.Heat the refined oil in a kadai. Fry mustard seeds,green chillies,chopped onions,cumin seeds and curry leaves for 3 mins atleast.
3.Add the ginger-garlic paste, turmeric powder,green chillies, fresh greenpeas (optional),chilli powder, coriander powder, grounded spice or garam masala and the salt. Saute this well and Allow this to boil for 3-4 mins.
4.Add the pulsed tomato and cook for 3 - 4 more mins till oil begins to separate on top,turn off the flame.
5. Add the cooked basmati rice to it and mix well till it is evenly spread.Check for salt and garnish
with roasted cashewnuts, fried onion rings and coriander leaves.
6.Serve this Tomato rice with raita, potato masala,thick coconut chutney and Chicken Fry.
