Palak Egg Omelette - Palak fried with onions and eggs
1 cup finely chopped spinach (palak)
5 nos eggs(beaten eggs)
1/2 cup finely chopped onions
3 no.s green chillies-finely chopped
a sprig -curry leaves
1/2 tsp salt
1 tsp freshly ground pepper powder
1/4 tsp ginger chopped
1 tbsp crushed cashews
2 tbsp refined oil
1.Heat 2 tsp oil in a kadai ,add green chillies,chopped onions,chopped ginger pieces and chopped spinach.
saute for 2 mins. Keep this aside.
2.Take a bowl .Beat the eggs well for 2 mins and add salt and freshly ground pepper.
3.Add the sauted onions and spinach and crushed cashews to the beaten eggs mixture and mix them well.
4.Heat oil in a non-stick tawa, do the egg omlettes(4 no.s) with oil.
5.Serve them with tomato ketchup or rice and sambar or with sandwich or chapathi.
