Spinach-Egg Bhurji is given here as the healthy recipe of the Day. Strict Vegetarians can try this recipe without Egg and include 2 tbsp lowfat grated Paneer instead. Its nothing but Scrambled Egg done with Spinach and selective spieces with Cream (Lowfat to make it healthier or U can do without it). This needs 12 mins cooking time and serves 4 nos. Spinach Egg Bhurji
Ingredients:
1 bunch Spinach - cleaned and chopped fine
3-4 eggs - beaten
1 medium sized Onion - Chopped fine
2 tbsp thin or lowfat cream
3-4 garlic cloves - pressed fine
1 tsp kasur or dry methi
1/3 tsp grated ginger
1/4 tsp jeera
1 tsp white pepper powder
1/2 tsp garam masala
1/2 tsp chilli powder
1/4 tsp nutmeg powder
1/3 tsp salt
2 tsp refined oil or olive oil or butter
Directions:
1.Heat olive oil in a kadai and fry garlic ,ginger,jeera with chopped onions for 3 mins.
2.Add the choopped spinach with 30 ml water and cook till water runs dry and mash half of it with the spoon.
3.Stir in the cream and the other seasonings and salt and stir-cook for 2-3 more mins.
4.Add the beaten Eggs or grated paneer and stir-cook for 3 more mins.
5.Add Dry methi with coriander leaves to garnish and stir it for 2 more mins.
6.Serve it hot with steamed or variety rices or with Indian Breads.That's all!.Yummy!.
