Carrot Pudding
Ingredients:
2 big carrots-grated
60 gms butter
1 cup refined flour
1 tsp vanilla extract
2 bread slices soaked in 150ml boiled milk for 10 mins
1 1/4 tsp baking powder
2/3 rd cup powdered sugar
Directions:
1.Cream butter and sugar.
2.Add grated carrots to the bread slices mixture with vanilla extract and mix it well.
3.Sift the remaining dry ingredients together.Add to the cream mixture.Mix well.
4.Mix it with the step 2 mixture and pour into large muffins cup 2/3rds full.Topt it with a spoonful grated carrot.
5.Preheat the Oven to 180 C and bake in the middle rack for 25 - 30 mins or till a skewer comes out clean.
6.Serve this Dessert anytime.
