Potato Frittata

I happened to taste this Potato Frittata - a simple savoury breakfast recently and wished to share it with U all.It can be said as Potato and Egg Flan -  Quiche sort of.U can adjust the flavor by choosing your fav herb(s) for this simple frittata with Parmesan cheese.This serves 3-4 nos and needs about 15 mins cooking time.U can have it any time.Enjoy Cooking at home.BonAppetit!.

Potato Frittata - Potato and Egg Flan
Ingredients:
1 potato(3/4th boiled,peeled and chopped)
1 small onion - chopped fine - optional
2 dried cherry tomatoes - optional
2 tbsp butter or olive oil
6 eggs
2 tbsp freshly grated Parmesan cheese
a pinch of Salt
1 tsp white pepper powder- to taste
1/2 tsp minced fresh parsley leaves- for garnishing or any herb U like

Direction:
1.Preheat the oven to 350 degrees F.
2.Beat the eggs adding grated parmesan Cheese,salt, chopped boiled potatoes,2 tsp refined flour,50 ml milk,any herb - little only and stir them in to egg mixture using a hand mixer.
3.Then,add chopped onion,dried cherry tomato pieces,boiled and chopped potatoes and mix it well.
4.Place the butter or olive oil in a medium Oven-proof Non-stick skillet and cook undisturbed it in low flame for 2-3 mins till the bottom of the frittata becomes firm.
6.Shift the skillet to the oven. Bake for 20 mins - checking every 5 minutes after crossing the 10th min or till the top of the Frittata becomes firm.Leave it for 5-10 mins.
7. Garnish with chopped parsley or any herb u like and serve hot.
