Potato Riceflakes Upuma - a Microwave Recipe

Potato Riceflakes(Batata Poha) is a traditional Maharastrian breakfast and a famous Mumbai fastfood item. This healthy and easy to prepare dish is done with pressed rice(Poha or Rice Flakes) and can be said as Potato Riceflakes Upuma.It can be served as a breakfast or a teatime snack.Try this snack at home and Enjoy it anytime!.

Potato Riceflakes Upuma - Potato cooked with brown Pressed Rice and selective spices

Ingredients:
    70 gms Samba Aval(Brown Poha or Rice Flakes)
    1 tsp Mustard seeds
    3 sprigs Curry leaves
    1 big Onion -chopped fine
    2 green chillies-de seeded,slit and chopped fine
    1 big potato
    50 gms peanuts
    a pinch of turmeric powder
    1/4 tsp Salt- to taste
    1 tsp coconut oil
    2 tsp refined oil
    1 tsp Lemon juice (optional)
    1 tsp coriander leaves (chopped)
    1 tbsp grated coconut

Directions:

    1.Boil the potato in a microwavable bowl with enough water for 10 mins on high and Take out the bowl. Leave it for 10 mins and peel and cut Potato in 1/2 inch cubes.
    2.Rinse the brown rice flakes in water for 2 - 3 times in running water for 2 secs(depending on the thickness of the riceflakes) and drain the excess water.
    3.Soak the peanuts in water for 10 mins and peel the peanuts.
    4.Heat the refined oil in a microwavable bowl with mustard seeds,curry leaves,onion and green Chillies
and microwave this on high for a min.
    5.Add the soaked and peeled peanuts and mix this well.Microwave this for a min on high.
    6.Add Potato cubes and turmeric powder and mix well.Microwave this for a min on high.
    7.Now add the soaked and drained riceflakes,chopped coriander and salt.Mix it well.Microwave this on
high for for a min and add lemon juice microwave this on medium high for 5 mins-if u want to add tangy taste to the dish.
    8.Take the bowl out and garnish with grated coconut on top and Serve this hot.U will Luv it.

Tips:
U can add mixed vegetables and try this recipe instead of adding cubed potato.
