Pumpkin Curry

This  Pumpkin Curry tastes so good that U will luv to have it more.U can have it with Indian Breads,Bread and Steamed rice.This serves 3-4 nos. and needs 12 mins cooking time only.U can do the same adding 2-3 tbsp coconut paste instead of  coconut milk.U can add 1/2 cup mashed boiled Turdal in Step 5 before adding milk and finish doing it.Enjoy Easy cooking at home.Enjoy ur Meal! Pumpkin Curry - Pumpkin pieces cooked with spices in coconut milk


Ingredients

    200 gms  yellow pumpkin pieces - cut
    5-6 nos finely chopped shallot(sambar onions)
    150 ml  tamarind pulp(of gooseberry size tamarind)
    1/2 tsp subji masala powder
    3 green chillies
    1/2 tsp cumin seeds
    1/2 tsp mustard seeds
    few curry leaves
    a pinch turmeric powder
    1 tsp salt - to taste
    1 tbsp chopped coriander leaves
    2 tsp coconut milk powder - dissolved in 200 ml water
    2 tsp refined oil

Directions

    1.Cook green chillies and tamarind pulp together for 3 mins on good flame.
    2.Add turmeric powder,1/2 tsp subji powder,salt and pumpkin pieces and 100ml water and cover it with lid and cook for 6 mins on good flame.
    3.When cooked,mash half the pumpkin pieces with a spoon.
    4.Heat oil in a kadai,add cumin seeds, mustard seeds,curry leaves,chopped coriander leaves and chopped shallots.saute them for 2 mins.
    5.Add the cooked pumpkin mixture with coconut milk to the kadai and cook for 5 more mins till oil separates on top.
    6.Serve this pumpkin curry hot with rice or chapati.Yummmy Yellow Pumpkin Curry indeed!

  3. Not a big fan of pumpkin, i have this mental block against making curries with sweet vegetables.. but this sounds very healthy.. someday :)
