Vivika or Vivikam is the taste of the South - a sweet Idli done with sugar and grated coconut added Idli batter. Very famous evening snack item when I was a kid but now this Vivika lost its familiarity to this young generation.Here the recipe is given with pathaneer added instead of plain water while grinding the Idli batter and mashed 1 ripe banana is also added.Pathaneer is a fresh extract from the Palm tree sap.These sweet Idlis can be done in 8 mins time. Try this at home and enjoy this Vivika.
Pathaneer Sweet Idlis(Vivika) - Sweet Idlis made with Pathaneer
Ingredients
3/4 cup Idli rice - soaked with 1 tsp fenugreek seeds for 40 mins
1/4 cup Split Urad dhal(skinless)-soaked for 40 mins
1/4 tsp salt to taste
600 ml Pathaneer-fresh extract from palm tree sap
1 ripe banana - chopped fine
1 cup grated coconut
1/2 cup crushed cashews,raisins and tutti-fruiti
1 tsp green cardamom powder
50 gm sugar(because pathneer tastes sweet)
2 tsp refined oil + 1 tsp ghee - mixed well to grease idli plates
Directions
1.Put the soaked Idli rice and soaked split urad dhal in a mixer grinder and grind them into a fine idli batter adding pathaneer (without adding water).
2.Mix this Idli batter with all the other ingredients except oil and mix well till it spreads evenly.
3.Pour this batter into greased idli plates and steam-cook for 7-8 mins without putting whistle.Turn off the flame.
4.Take the Sweet Idlis out after 10 mins time and cut them into desired shapes.
5.Tasty Pathaneer Sweet Idlis(Vivika) are ready to be served.
Note: U can use 200ml first coconut milk and 400ml second coconutmilk in substitute to Pathaneer,if it is not available in ur Area or use plain water.

Wow... I can't believe that I am actually looking at this recipe.. It is my favourite dish. My gran makes it during the summers as pathaneer is available only during the sunny days in Tamil Nadu.. I agree that authentic traditional recipes do not reach the younger generation...
