Egg in Mustard Sauce

This recipe states a Simple and super delicious Bengali Mustard Sauce Curry done with Boiled Eggs and South-Indian touch.It tasted so good with Egg even though it has been termed as an Ideal Sauce for Fish preparation. This recipe gives a flavorful and aromatic Egg Curry that U would enjoy repeating many more  times for its finger-licking taste.This needs 15 mins Cooking time and Serves 4 nos. U can try this recipe with Baby Potato,Egg Plant or Brinjal Pieces,Cauliflower Florets,Tapioca,Soy Chunks, Capsicum, Mushroom, and even with tomato. Boiled Egg in Mustard Sauce
Ingredients:
4 Eggs
1/4 tsp turmeric powder
1/4 tsp salt
4 tsp + 1/2 tsp mustard seeds
2-3 sambar onions(optional)
1 garlic clove
1 cm ginger pieces
2 green chillies
100 ml water
2-3 tbsp curd
1 tbsp mustard oil/refined oil
few curry leaves
few coriander leaves
Directions:
1.Boil the eggs for 8 mins on good flame and de-shell the Eggs.Do slits on the sides and do not deshape it.
2.Grind the mustard seeds,green chillies,garlic and ginger into a fine paste.Take that out and then add the
curd and blend it fine with 2-3 tbsp water.Keep it aside.
3.Heat mustard oil and sputter mustard seeds,curry leaves and coriander leaves.
4.Add the Ground paste,turmeric  powder and salt.Saute it for 3-4 mins on good flame till oil begins to  float.
5.Add boiled Egg and stir it for 4 mins with 70 - 100ml water on good flame.
6.Then add curd ,stir it for  amin and Turn off the flame.

@ Sumee - I added 2 Sambar Onions,100 ml water and Curd in the process.That was not much gravy - just 6-7 tbsp in the pic.
